If Rory is made of plastic then how can he die

He is human. He dies in Series 5, then becomes a plastic auton to trick the Doctor, when the universe is reset it wipes the Doctor from existence meaning that Amy and Rory never travelled with him meaning Rory never got the chance to die saving him.
